½ cup organic coconut oil
½ cup packed brown organic sugar
1 egg yolk, 2 egg whites
1/3 cup mild-flavored maple molasses
1 tablespoon finely shredded orange peel (optional)
4 tablespoons freshly squeezed orange juice
1 ½ cups all-purpose flour
1 ½ cup whole wheat flour
2 teaspoon ground ginger
3 teaspoons ground cinnamon
½ teaspoon baking soda
½ teaspoon salt
1 teaspoon ground cloves
Mix with wisk the butter, brown sugar, egg yolk, egg whites, maple molasses, shredded orange peel, and orange juice together until throughly blended. Consistancey should be runny.
Fold with spoon the all-purpose flour, whole wheat flour, ground ginger, ground cinnamon, baking soda, salt, and ground cloves until throughtly blended.
Next pour the contents of Bowl 1 into Bowl 2 and mix well with your hands. Refrigerate cookie dough for about 2 hours.
Take dough and roll out with rolling pin on flat surface. Use cookie cutters to cut out fun shapes. Places cookies on cookie sheet and bake on 350 F for 13 to 18 mins or until edges and bottom are browner.
