Cucumber Salad


2 garlic cloves
2 to 3 medium/large tomatoes
2 to 4 cucumbers
1 to 1 ½ cup of fine chopped parsley
¼ cup of fine chopped mint
¼ cup olive oil
½ tsp salt (add more as needed)


Clean and dice the tomatoes and cucumbers in very small cubes and add to salad bowl. Fine chop 1 cup of parsley and ¼ cup of fresh mint and add to salad bowl. Crush the garlic with salt into a pulp like paste and add it to the salad with about ¼ cup of olive oil. Fold Salad until evenly distributed. Taste for salt/oil/garlic and add as needed.

Serving Suggestion:
Serve with small romaine lettuce leaves and use them as scoops or as a side salad.
