Kafta (Kofta/Kefta) Pita Sandwiches

Ingredients

1 - 1 1/2 cups curly parsley minced (about 1-2 bunches)
4 medium tomato, chopped fine
2 -3 medium tomato, thin sliced rounds
1 medium onion, chopped fine
1 pound 85% - 97% lean (organic) ground beef
Sea salt to taste
Black pepper to taste
1/4 cup canola oil - OPTIONAL if you use a really lean meat (grape seed, olive, or veg oil)
Whole wheat pita breads, 6-8 inch diameter (or whole wheat toast)

Directions:

In a large bowl mix together parsley, diced tomatoes, onions, ground beef, lamb, oil, salt and pepper thoroughly.

Place the meat mixture into a nonstick baking sheet or pan and spread it out evenly to about 1 centimeter thick. Next place the round tomato slices on top of the meat mix and evenly distribute it to cover the top surface of the meat mix. Sprinkle a little salt across the top. Bake at 350 to 370 degrees F for about 40 minutes, or until it is thoroughly cooked, edges/top are browned, but be sure that it has moisture and it doesn't dry out completely.

Heat pita bread in toaster oven or oven for 1-2 mins or until soft enough to open. Snip an edge of bread with kitchen shears or knife to open like a pocket. You can also use whole wheat toast.

Once the Kafta is ready just slice it up in squares and place the patties inside the pita pocket evenly. Add sauce/salsa/condiment if you desire and serve.




Special Notes:
~You can also substitute ground turkey, lamb or ground bison

~Some individuals like to use ground beef with more fat content and omit the added oil.
