Lentil Soup


2 onions
2 ½ cups of dry green lentil beans
4 to 5 garlic cloves
2 tablespoons of olive oil
½ tsp cumin
½ tsp turmeric
½ tsp black pepper (optional)


Fill pot about half way with water. Clean and rinse the lentil beans and add them to the pot. Fine chop the onions. Add the chopped onions, the whole peeled garlic cloves and cumin, turmeric, black pepper, and olive oil.

Cook on high until it comes to a boil. Next turn heat medium or medium-low. Check pot often to make sure lentils say soupy (add water as needed). Once beans are almost done , add salt to taste. Cover pot and let cook until lentils are well done.

Serving suggestion:
Serve with pickled olives or cucumbers on the side, or as an appetizer.
