Quinoa, Black Bean and Chickpeas


1 teaspoon vegetable oil
4 cloves garlic, peeled and chopped
1 cup uncooked quinoa
2 cups vegetable broth (or Chicken or beef broth)
1 teaspoon ground cumin
2 tablespoons of fresh minced oregano
1/4 cup of diced green bell pepper
salt and pepper to taste
1 teaspoon of Italian dried spices (OPTIONAL)
1 (15 ounce)can chickpeas, rinsed and drained
1 (15 ounce)can black beans, rinsed and drained


1. Heat the oil in a medium saucepan over medium heat. Stir in the garlic, bell pepper, oregano, and saute until lightly browned.

2. Mix quinoa into the saucepan and cover with vegetable broth. Season with cumin, salt, Italian spices and pepper. Bring the mixture to a boil. Cover, reduce heat, and simmer 20 minutes, or until broth is absorbed.

3. Mix in the black beans and chickpeas and let it stand for about 5 mins covered.

~Vegan friendly (use vegetable broth)

~I also like sprinkling a little fat-free feta on top.
