Baked Mash Sweet Potatoes

Ingredients

Use as many sweet potatoes as you want to make for as much baked mash sweet potatoes as you think you need. What I usually make for the week for 3 people is as follows:

6 -8 Medium Sweet Potatoes (do not remove the skin)
Ground Cinnamon

Directions:

Preheat your over to 415 degrees F. Wash the sweet potatoes with veggie spray/water and a little soap/etc. Next poke the sweet potatoes on the side that will face up with a knife. I usually make a couple of long incisions but not all the way through to the other side, only about half way in. Place a long piece of aluminum foil on a cookie sheet or baking sheet and place the sweet potatoes in the center of the sheet of foil with the insicion side faced up. Take the ends of the foil and wrap the sweet potatoes, be sure they are completely covered. Place the baking sheet containing the wrapped sweet potatoes in the oven and let it bake for about 1 to 2 hours or until done. Sweet Potatoes are done when they are soft all the way through. While still hot or pretty warm (you can leave them out on a counter to cool a little if you want) peel the skins off and place them in a bowel or storage container. Once they are all peeled take a spoon or fork and proceed to mash them up until they are pretty smooth.

Serving suggestions:
You can eat them while they are still warm. Just sprinkle some ground cinnamon or leave them plain and enjoy, or you can also eat them cold (right out of the frig) with a sprinkle of ground cinnamon or plain. Eat them as a snack or as a side with your meal. Enjoy!
