Sweet Potato Pie

* Recipe Makes two 8 to 9 inch pies

Filling Ingredients

6 peeled and boiled Sweet Potatoes
1/4 cup Grapeseed oil
2 whole Eggs (OR you can use 1 yolk and 3 egg whites OR 4 egg whites-no yokes to cut back on fat)
1/4 to 1/2 cup of Reduced Fat Milk
1/2 tbsp ground Cinnamon
1/2 tsp ground Nutmeg
1 tbsp Mild Molasses (optional)
1 tsp Vanilla Extract

Filling Directions:

You can boil the sweet potatoes with or without skin for about 40 mins or until well done. Poke them with a fork to make sure they are done all the way through. Next drain the potatoes, if you boiled them with the skin be sure to skin them after draining them. You can run cold water over them so that they can cool enough to skin them but make sure they are drained.

To a mixing bowl or in the same pot you boiled the sweet potatoes add the still hot boiled sweet potatoes, oil, eggs, cinnamon, nutmeg, molasses and vanilla extract. Puree them with a mixer on medium/high and slowly pour the milk in until thoroughly blended and smooth and you get the desired consistency, note that the filling should be kind of think. Set the filling aside or put in the refrigerator until you are ready to use it.

Pie Crust Ingredients:

3/4 cup sifted all-purpose flour
2 cups sifted whole wheat flour
1/2 cup vegetable oil (OR canola oil OR grapeseed oil OR coconut oil)
1/2 cup reduced fat milk
1 tsp salt

Pie Crust Directions:

Mix flour and salt together. Pour milk and oil into one measuring cup, do not stir, and add all at once to flour. Stir until mixed, and shape into 2 flat balls. Wrap in plastic wrap. Refrigerate for 15 minutes or more.

Roll out on lightly floured surface

Place the pie crust in pie baking dish, using a fork poke the crust a few times along the bottom. You can also press the fork end along the pie's edge to give it texture/design, and bake on 350 until golden (thoroughly done. Next set it out to cool.

Putting the Pie Together:

Finally, fill the pie crust (which is still in the pie baking dish) with the pie filling. Next, bake the pie at 350 degrees F for about 25 mins.

Tada! You can now enjoy your slice of pie warm or cold with a glass of milk or cup of hot coffee/tea.
