Fun Spring Salad with Avocado Dressing

Salad Ingredients

4 to 5 oz bag/clamshell container of a Spring Salad Mix (about 1 serving)
     11 oz clamshell Value Pack Spring Salad Mix (about 5 servings)
     1 lb clamshell Club Pack Spring Salad Mix  (about 8 servings)
2 - 3 fresh Strawberries per salad serving
1 tbsp of roasted Pine Nuts  OR 1 tbsp of roasted Almond halves per salad serving

Dressing Ingredients

2 - 3 ripe pitted and skinned Avocados
1 lemon (juiced)
1/3 - 1/4 cup reduced fat milk (or almond milk)
1/4 cup Extra Virgin Olive Oil
1/4 small Onion
1 minced Garlic clove
1 pinch of Cumin powder
Salt and Black Pepper to taste


Wash and dry salad mix and set aside. Wash and cut the fresh strawberries in quarters and set aside. To make the dressing add the avocados, lemon, milk, oil, onion, garlic, and cumin to blender/hand blender and puree until completely smooth. Add salt and black pepper to taste and blend thoroughly.

Put salad mix to serving bowls, top with strawberries and nuts, and finally add a dollop or 2 of the avocado dressing and serve!
