No Bake Apple Pie

Ingredients for crust

8 pitted dried Dates
8 dried Figs
1/4 cup Walnut halves
Pie mold dish
Parchment or Wax paper

Directions:
Cut a piece of parchment or wax paper to cover the bottom of the pie mold. Next, put all crust ingredients in a food processor and mix for about 20 to 30 seconds. Take the mix out and press it into the pie mold bottom to create your crust. Make it about 1/3 of a inch thick and spread and press evenly.


Ingredients for pie sauce

2 skinned Apples (note: use any kind of apple you would like)
1/2 Orange (juiced)
8 pitted dried Dates
8 dried Figs

Directions:
Put all the ingredients into a blender or use a hand blender and puree them until smooth. Set aside. I used my Vitamix.


Ingredients for pie filling

6 to 8 skinned and thinly sliced Apples
1 Orange (juiced)
1/2 Lemon  (juiced)

Directions:
In a small bowl add the orange and lemon juice. Dip the apple slices into the orange/lemon mix to thinly coat them. This will prevent them from turning brown. Next, lay a layer of sliced apples on the pie crust. Then add a thin coat of the pie sauce. Again lay another layer of sliced apples followed by a thin layer of pie sauce and continue to repeat until you have about 4 to 5 layers.

I topped my pie with a final layer of pie sauce and sprinkled some crushed walnuts on top.
Refrigerate for 30mins to an hour. Before serving carefully using the corners of the parchment or wax paper lift the pie out of the pie mold and set on a flat serving dish. Slice and serve. Will stay good for up to 3 days.
