Breakfast Egg White Spicy Omlette


6 to 8 Egg whites
1 to 2 fresh chopped kale leaves
1/3 cup of fresh chopped oregano
1 Serrano pepper
4 to 6 slices of diced ham
1 diced roma tomato
1 tbsp. coconut oil (liquefied)
a spot of milk (1/4 cup or less)
top with a sprinkle of mozzarella cheese
salt and pepper to taste


Whisk the egg whites in a large bowel until fluffy (you can use hand mixer). Next add the milk and whisk for 30 seconds to a minute. Next add the kale, oregano, Serrano pepper, ham, tomato, coconut oil, and salt/pepper to taste. Fold the mix until well blended.

In a bake pan, spray with non-stick cooking spray and pour the omelet mix into the pan and top with lightly sprinkled shredded 2% mozzarella cheese. Bake on 400 degrees for about 15 to 20 mins. Let cool and cut into 3 to 4 servings.

Suggestions: 1 serving on a whole wheat tortilla!
