Yummy Tuna Patties

Ingredients (makes 2 servings):

1 can albacore tuna strained...
1 tbsp lemon juice
1 handful of rolled oats (oatmeal - not instant)
1 to 2 eggs (or 1 whole egg and 1 egg white)
Italian seasonings to taste
Fresh minced parsley
Salt and pepper to taste
1 tbsp of coconut oil (optional)


 Mix all ingredients in a bowl. Then form patties and cook on medium high on a non-stick skillet for about 1 min then flip and cook other side until well done.

Serving suggestion: Topped with a sprinkle of parmesan, diced avocado and salsa.
