Oatmeal, never boring



Ingredients:

- 2 cups raw rolled oats
- 3 cups water
- 1 tbsp. ground cinnamon
- 1 cup almond/coconut/cow milk
- 1 tbsp. coconut oil (optional)
- 1/2 cup raisins or cranraisins (optional)

- fresh diced fruits (pictured: 2 peaches and 2 apples), or thaw and use frozen fruit
- raw nuts and or seeds (pictured: almonds)
- honey or agave nectar to taste (optional)

Directions:

Bring water to a boil and add the ground cinnamon. Let it simmer for about a minute and then add the oats. Cook on medium heat until well done and stir often to prevent from sticking or clumping (see directions on the oat's packaging). Add milk, you can add more than a cup if you don’t like your oatmeal too thick. Stir and let it simmer for about 2 to 3 minutes or until well blended.

Take the oatmeal off the stove and while still hot add the coconut oil and stir until well blended.  Add the raisins and mix well. Place oatmeal in serving bowls or on packing bowls and top with your choice of toppings.

Toppings: you can add the fruit as is or you can place it in a small pot, covered on low heat for about 10 to 15 mins to soften the fruit and to let it release some of its natural flavor and juices. Top your oatmeal with fruit, nuts/seeds, and lightly drizzle your choice of sweetener.

Makes about 5 servings. Serve and enjoy.
