Quinoa-Beef Stuffed Mini Bell Peppers


- 1 lb spiced (to taste) 97% lean ground beef - cooked well done
- 1 cup cooked quinoa
- Mini multicolor bell peppers - stemmed and seeded (hollowed out)
- Non-stick baking spray
- Foil and baking sheet


Cook your ground meat and season to taste. Suggestions , mince 1 onion, sauté until soft and golden then add the ground meat, salt, pepper, 1 to 2 garlic cloves pulped, and/or any other seasonings you like.  Toss the well done ground meat in a bowl with the cooked quinoa until well blended. Stuff the hollowed out mini bell peppers. On a baking sheet place a sheet of foil. Spray the foil with non-stick baking spray and place the stuffed bell peppers on it. Wrap the bell peppers with the foil sheet until completely covered and bake for 20 to 30 mins on 375 to 400 degrees F.

Serve with a side salad or any other side and enjoy!
