No Bake Strawberry Creme Cake


- 1 16oz. bag of frozen whole strawberries
- 8 oz. fresh strawberries sliced
- 1/2 avocado
- 3 tbsp of chia seeds
- 1/2 cup of plain Greek yogurt
- 3 tbsp of organic strawberry preserves
- dark chocolate shavings (optional)


- 1/2 cup of shelled walnuts
- 1/2 cup of dried figs (or other dried fruit)
- 2 tbsp of peanut butter
- Spring Form Pan or use parchment paper in a round baking pan for easy cake removal.


Place all crust ingredients (walnuts, figs, peanut butter) in a food processor and bend until all ingredients are finely chopped and blended. Take the mix and spread it in the pan evenly to create a crust layer.

Next, place frozen strawberries, yogurt, avocado, chia seeds, and strawberry preserves into blender and blend until smooth. Pour half of the filling into the pan. Next set a layer of sliced strawberries on top of the filling. Pour the rest of the filling into the pan and finally decorate the top of the cake with the remainder of the sliced strawberries and dark chocolate.

Place the cake in the freezer for one to two hours before removing from pan. Serve and enjoy!
