Carrot, Apple, Oatmeal Chocolate Chip Cookies

Ingredients:


1/2 cup soft butter (or coconut oil or vegan butter substitute)
1/4 cup Sugar (or coconut sugar or Stevia)
2 Whole Eggs (4 egg whites or apple sauce, 1 egg = 1/4 cup apple sauce)
1 tsp Vanilla Extract

2 Gala or Fuji Apples - Skinned, cored, and cut in quarters
2 Whole Carrots - washed and cut in half

1/4 cup Organic Coconut Flour
3/4 cup Organic Whole Wheat Flour (or 1 cup wheat flour and omit the coconut flour)
2-3 cups of Raw Old Fashioned Oatmeal (do not use instant oats)
1/4 cup Shredded Coconut
1/2 cup Semi Sweet Dark Chocolate Chips (optional)
1 tbsp Ground Cinnamon
1 tsp Baking Powder
1/4 tsp Sea Salt

Directions:
Preheat oven to 350°F.

In a small pot add about 1/4 cup water, apples, and carrots and steam on med-low temp until soft. Once soft use a fork to mash and mix well the apples and carrots and allow to cool; set aside.

In a bowl blend eggs, butter/oil, and sugar for 2 - 4 minutes. Then add the vanilla extract and blend another 2 minutes. Add the cooled apple and carrot mix and fold until well blended.

In a separate bowl, combine wheat flour, coconut flour, oatmeal, shredded coconut, chocolate chips, cinnamon, baking powder and salt and mix well. Then slowly pour the dry ingredients into the carrot apple mix and stir until all ingredients are well blended.

Place tablespoon size scoops of cookie mix on a baking sheet and bake on 350°F for 15-20 minutes or until bottom of cookies are golden brown. 

Let cool, serve and enjoy!
