Ingredients:
3 to 4 apples (Gala, Fuji, Pink Lady, any sweet variety)
1 tsp coconut oil
1 tsp vanilla extract
Directions:
Peel and core the apples and cut them in quarters. Place the apples and about 1/4 cup of water in a small pot. Cover the pot and cook on low medium heat for about 15 to 20 mins or until soft all the way through.
Drain in a small glass the excess water and set aside. While the apples are still warm mash them up with a whisk or fork. Stir in the coconut oil and vanilla extract. If the apple sauce seems too dry stir in some of the excess water a few teaspoons at a time. Empty the apple sauce into a storage container and allow to cool before serving.
Makes about 4 to 5 servings. Serve and enjoy!
Toppings: a sprinkle of ground cinnamon, crushed walnuts, drizzle a little bit of raw honey or agave nectar for added sweetness.
