Shepherd's Pie

Ingredients - Filling:

1 lb lean ground meat (beef, chicken, turkey)
1 large onion
3 to 5 tbsp oil (grape seed, canola, coconut, olive, etc.)
2 cups of chopped veggies, can also use frozen (carrots, broccoli, cauliflower, peas, celery, squash, etc.)
Black pepper
Sea salt
Turmeric (optional)
You can also use any additional spices you might like to add more flavor.


Ingredients - Mash potatoes:

12 to 15 small potatoes
1/2 to 3/4 cup coconut oil (or butter or butter substitute)
Sea Salt
Black Pepper
1/4 cup Milk (or plain Greek yogurt, or other milk substitute)


Directions - Filling:

Finely chop the onion and add the onions and 3 tbsp oil to a pan/pot. Cook onions until well done and lightly golden on medium low heat. Next add the meat to the onions and season with pepper, salt, and turmeric and cook until the meat is well done on medium high heat. Finally stir in the veggies and cover the pan/pot, cook on medium heat until veggies are done. Set the mix aside.

Directions - Mash Potatoes:

Peel the potatoes and cut in half. Place all potatoes in a pot of water and cook on medium high heat until well done, soft all the way through. Next drain most of the water out of the pan but leave about 1/4 cup or less. Add salt, pepper, coconut oil, and milk and mix with a baking mixer until mash potatoes are smooth and fluffy.

Layering your Shepard's pie:

In a glass baking pan 3 qt. Pyrex or a non stick baking pan add a 1/2 in. layer of mash potatoes evenly spread to cover the bottom of the baking pan. Next evenly spread the meat mix. Finally, add one more layer of mash potatoes evenly spread on top of the meat mix. Bake in the oven on 350 degrees F until mash potatoes are golden.
